Introducing: Exotic Coconut Mango Tart

Today, I am excited to share with you a delightful dessert that perfectly captures the taste of summer – my Exotic Coconut Mango Tart. This tropical treat is a refreshing and indulgent way to enjoy the season’s ripe mangoes in a unique and creative way.

Ingredients:

  • 2 ripe mangoes (400g)
  • 1 can of coconut cream (400ml)
  • 2 tablespoons of fresh lime juice
  • 6 tablespoons of maple syrup
  • 4 tablespoons of chia seeds
  • 1/2 cup of coconut flakes
  • 1 cup of almond flour
  • 1/4 cup of melted coconut oil
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Kitchen Tools:

  • food processor
  • tart pan
  • mixing bowl
  • whisk
  • spatula

To begin, preheat your oven to 350°F (180°C). In a food processor, combine the almond flour, melted coconut oil, vanilla extract, and a pinch of salt. Pulse until the mixture comes together. Press this mixture into the bottom of a tart pan, creating a crust. Bake for 10-12 minutes until golden brown, then set aside to cool.

In a mixing bowl, whisk together the coconut cream, lime juice, maple syrup, and chia seeds. Let this mixture sit for 10 minutes to allow the chia seeds to gel and thicken the filling. Once the filling has set slightly, pour it over the cooled crust in the tart pan.

Arrange the diced mangoes on top of the coconut cream filling, creating a beautiful pattern. Sprinkle coconut flakes over the mangoes for an extra crunch and tropical flair. Chill the tart in the refrigerator for at least 2 hours to set before serving.

Once chilled, slice the Exotic Coconut Mango Tart into 8 pieces. Each serving is approximately 250 grams. This decadent dessert is around 350 calories per slice, making it a guilt-free indulgence.

One unique tip for this recipe is to sprinkle a little extra lime zest over the finished tart before serving. The bright, citrusy flavor pairs perfectly with the creamy coconut and sweet mango, adding an extra burst of freshness to each bite.

I encourage you to try this Exotic Coconut Mango Tart and get creative with your own variations. Whether you add a sprinkle of toasted coconut on top or drizzle with melted dark chocolate, this dessert is sure to impress. Enjoy!
