Ingredients:

  • 2 ripe mangoes (400g)
  • 1 can of coconut cream (400ml)
  • 2 tablespoons of fresh lime juice
  • 6 tablespoons of maple syrup
  • 4 tablespoons of chia seeds
  • 1/2 cup of coconut flakes
  • 1 cup of almond flour
  • 1/4 cup of melted coconut oil
  • 1 teaspoon of vanilla extract
  • Pinch of salt

To begin, preheat your oven to 350°F (180°C). In a food processor, combine the almond flour, melted coconut oil, vanilla extract, and a pinch of salt. Pulse until the mixture comes together. Press this mixture into the bottom of a tart pan, creating a crust. Bake for 10-12 minutes until golden brown, then set aside to cool.

In a mixing bowl, whisk together the coconut cream, lime juice, maple syrup, and chia seeds. Let this mixture sit for 10 minutes to allow the chia seeds to gel and thicken the filling. Once the filling has set slightly, pour it over the cooled crust in the tart pan.

Arrange the diced mangoes on top of the coconut cream filling, creating a beautiful pattern. Sprinkle coconut flakes over the mangoes for an extra crunch and tropical flair. Chill the tart in the refrigerator for at least 2 hours to set before serving.
