Today, I’m excited to share a cozy and comforting recipe perfect for the fall season. This Butternut Squash Gnocchi with Sage Butter is a dish that always brings warmth to my heart and home. The combination of sweet butternut squash and earthy sage is truly a match made in culinary heaven.

Ingredients:

  • 1 medium-sized butternut squash (about 800g)
  • 2 large potatoes (about 400g)
  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup unsalted butter
  • Handful of fresh sage leaves
  • Salt and pepper to taste

While the squash is roasting, peel and chop the potatoes into chunks. Boil them in a pot of salted water until they are fork-tender. Drain the potatoes and mash them until smooth using a potato masher.

Scoop out the roasted butternut squash flesh and add it to the mashed potatoes. Mix in the flour, egg, salt, and pepper until a dough forms. Roll the dough into ropes and cut them into bite-sized pieces to form the gnocchi. Press each gnocchi lightly with a fork to create ridges.

Bring a large pot of salted water to a boil and add the gnocchi in batches. Cook until they float to the surface, then remove them with a slotted spoon and set aside.

In a separate pan, melt the butter over medium heat. Add the fresh sage leaves and cook until the butter is golden and aromatic. Toss the cooked gnocchi in the sage butter until well coated.

Serve the Butternut Squash Gnocchi with Sage Butter hot, garnished with extra sage leaves and a sprinkle of Parmesan cheese if desired.
