  • fresh ginger (peeled and minced) – 25g
  • coconut milk – 400ml
  • chicken breast (cut into cubes) – 300g
  • basmati rice – 250g
  • green curry paste – 50g
  • pineapple chunks – 200g
  • cilantro (chopped) – 10g

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

To start, heat a large pot over medium heat and add the minced ginger. Cook for a couple of minutes until fragrant, then add the green curry paste and stir to combine. Pour in the coconut milk and bring to a simmer.

Add the chicken cubes to the pot and let them cook in the flavorful broth for about 15-20 minutes, or until cooked through. In the meantime, cook the basmati rice according to package instructions.

Once the chicken is cooked, stir in the pineapple chunks and let them warm through. Taste the curry and adjust the seasoning if needed. Serve the curry over a bed of fluffy basmati rice and garnish with chopped cilantro.
