Today’s Unique Creation: Maple-Roasted Sweet Potato Parfait

As the crisp autumn air begins to make its presence known, I find myself craving the warm, comforting flavors of fall. Today, I’m excited to share with you a recipe that combines the sweetness of maple-roasted sweet potatoes with the cool creaminess of a parfait. This Maple-Roasted Sweet Potato Parfait is a delightful twist on a classic dessert, perfect for the season ahead.

Ingredients:

  • 2 medium sweet potatoes, diced
  • 50g maple syrup
  • 1 tsp cinnamon
  • 200g vanilla yogurt
  • 50g granola

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • spatula

To begin, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, toss the diced sweet potatoes with maple syrup and cinnamon until well coated. Spread the sweet potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, or until caramelized and tender.

While the sweet potatoes are roasting, assemble the parfait. In serving glasses or bowls, layer the roasted sweet potatoes with vanilla yogurt and granola. Repeat the layers until the glass is full, finishing with a dollop of yogurt on top.

Once the sweet potatoes are done roasting, allow them to cool slightly before adding them to the parfait. The warm, caramelized sweetness of the maple-roasted sweet potatoes pairs perfectly with the creamy yogurt and crunchy granola, creating a delightful contrast of flavors and textures.
