Unicorn Dream Cake

Today, I am excited to share my latest creation with you – the Unicorn Dream Cake. This whimsical dessert is perfect for any special celebration or when you simply want to indulge in something truly magical.

Ingredients:

  • 1 vanilla bean
  • 50ml rose water
  • 200g almond flour
  • 400ml coconut milk
  • 100g maple syrup
  • 150g butter
  • edible glitter for decoration

Kitchen Tools:

  • mixing bowl
  • springform pan
  • whisk
  • saucepan
  • piping bag

To start, split the vanilla bean and scrape out the seeds. In a mixing bowl, combine the vanilla seeds, rose water, almond flour, coconut milk, maple syrup, and softened butter. Mix until well combined. Pour the batter into a greased springform pan and bake in a preheated oven at 180°C for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the unicorn-inspired decorations. Melt some white chocolate and color it with food coloring to create pastel shades. Once the cake has cooled, use a piping bag to create swirls of colored chocolate on top. Sprinkle edible glitter over the chocolate decorations for a magical touch.

The Unicorn Dream Cake weighs approximately 900g once cooked and serves 8. Each serving is around 112g with an estimated calorie count of 350 per slice.

One unique tip for this recipe is to add a touch of rose water to the whipped cream for a fragrant and floral twist. This will complement the almond and coconut flavors perfectly.
