This dish, a fusion of flavors and ingredients, is my way of bringing a taste of art into your kitchen.

Ingredients:

  • purple sweet potatoes (300g)
  • goat cheese (100g)
  • pistachios (50g)
  • honey (30ml)
  • fresh thyme (10g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • oven
  • food processor

To start, preheat your oven to 400°F (200°C). Wash and scrub the purple sweet potatoes, then slice them into thin rounds using a sharp chef’s knife. Arrange the potato slices on a baking sheet and roast them in the oven for about 25-30 minutes, or until they are tender and slightly caramelized.

While the sweet potatoes are roasting, prepare the filling. In a food processor, combine the goat cheese, pistachios, honey, and fresh thyme. Pulse the mixture until it forms a creamy and slightly chunky texture.

Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Take half of the roasted slices and spread a generous amount of the goat cheese mixture on each slice. Top with the remaining sweet potato slices to create little “sandwiches.”

Return the sweet potato stacks to the oven for another 5-7 minutes, just until the goat cheese begins to melt and the flavors meld together. Remove from the oven and let them cool for a few minutes before serving.

This artful dish weighs approximately 460g in total and serves 4, with each serving averaging around 115g. As for the calorie count per serving, it’s estimated to be around 250 calories.

One creative tip for this recipe is to garnish the sweet potato stacks with additional fresh thyme leaves and a drizzle of honey before serving. This adds a lovely aromatic touch and enhances the flavors even more.
