For me, the best way to kick off the weekend is by trying out a brand new recipe that promises a burst of flavors and a hint of adventure. This week, I’m excited to share my latest creation: Spicy Mango Curry Chicken. It’s a dish that combines the sweetness of mango with the heat of curry, creating a culinary experience like no other.

To start, gather the following ingredients:

  • 500g chicken breast, diced
  • 2 ripe mangoes, cubed
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 onion, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Prepare your kitchen tools:

Start by heating a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set it aside.

In the same skillet, add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant, then add the curry powder and chili flakes. Stir well to combine and let the spices toast for a minute.

Next, add the cubed mangoes and coconut milk to the skillet. Stir everything together and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld together.

Once the sauce has thickened slightly, add the cooked chicken back to the skillet. Stir to coat the chicken in the mango curry sauce. Squeeze the lime juice over the top and season with salt and pepper to taste.

Let the dish simmer for an additional 5 minutes to ensure the chicken is fully cooked and the flavors have fully developed.
