I’m excited to share a warm and comforting recipe with you today — Spiced Pumpkin Soup. As the weather starts to cool down, nothing beats a hearty bowl of soup to cozy up with. This recipe combines the earthy sweetness of pumpkin with a blend of aromatic spices for a truly memorable flavor experience.

Ingredients:

  • 500g diced pumpkin
  • 200g chopped carrot
  • 150g diced onion
  • 3 cloves minced garlic
  • 1 tbsp grated ginger
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1L vegetable broth
  • 400ml coconut milk
  • 2 tbsp olive oil
  • to taste

To start, heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant. Next, add the diced pumpkin, chopped carrot, turmeric, coriander, and cumin powder. Stir well to coat the vegetables with the spices.

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and let it cook for about 20-25 minutes until the vegetables are tender. Once cooked, remove the pot from the heat and let it cool slightly.

Using an immersion blender, blend the soup until smooth and creamy. Stir in the coconut milk and season with salt and pepper to taste. If the soup is too thick, you can add more vegetable broth to reach your desired consistency.

Tips:

For an extra depth of flavor, roast the diced pumpkin in the oven before adding it to the soup. This will intensify the sweetness and add a slight caramelized note to the dish.

Finally, serve the Spiced Pumpkin Soup hot, garnished with a swirl of coconut milk and a sprinkle of freshly ground black pepper. This soup pairs beautifully with crusty bread or a side salad for a complete meal.
