Creative Cabbage Rolls

Hey there, foodies! Today I’m excited to share with you my latest creation: Creative Cabbage Rolls. I was inspired by the changing season and wanted to come up with a dish that would warm both the belly and the soul. These cabbage rolls are a fusion of classic comfort food and unexpected flavors, making them a perfect dish for any occasion.

To start, gather the following ingredients:

  • 200g ground lamb
  • 100g quinoa
  • 50g dried apricots
  • 50g feta cheese
  • 8 large cabbage leaves
  • 30g pine nuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • to taste

Don’t forget to grab these essential kitchen tools:

  • mixing bowl
  • saucepan
  • baking dish
  • knife
  • cutting board

Start by preheating your oven to 180°C. In a saucepan, cook the quinoa according to package instructions. Meanwhile, finely chop the dried apricots and feta cheese. In a mixing bowl, combine the cooked quinoa, ground lamb, chopped apricots, feta cheese, pine nuts, cinnamon, nutmeg, salt, and pepper. Mix everything together until well combined.

Next, carefully remove the core from each cabbage leaf to make them easier to roll. Place a generous scoop of the lamb mixture onto each cabbage leaf and roll it up, tucking in the sides as you go. Place the cabbage rolls seam side down in a baking dish.

Once all the cabbage rolls are assembled, cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cabbage is tender and slightly crispy on the edges.

Once the cabbage rolls are cooked through, remove them from the oven and let them cool slightly before serving. These Creative Cabbage Rolls weigh approximately 1000g in total, making around 4 servings. Each serving is approximately 250g and packs a flavorful punch with around 400 calories.

For a unique twist, try adding a sprinkle of sumac over the cabbage rolls before baking. This Middle Eastern spice will add a tangy, citrusy flavor that complements the lamb and apricots beautifully.
