As the weather starts to cool down, I find myself craving warm and comforting meals that pack a punch of flavor. That’s why I’m excited to share my latest creation with you – a Spicy Mango Chicken Curry that will tantalize your taste buds and warm you from the inside out.

For this recipe, you’ll need the following ingredients:

  • 500g chicken breast, diced
  • 1 ripe mango, cubed
  • 400ml coconut milk
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • Handful of fresh coriander, chopped
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

To prepare this dish, start by heating olive oil in a large pan over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent. Next, add the diced chicken breast and cook until it is no longer pink.

Once the chicken is cooked through, sprinkle curry powder and chili flakes over the chicken, stirring well to coat. Pour in the coconut milk and add the cubed mango. Allow the curry to simmer for about 15-20 minutes, until the mango is soft and the sauce has thickened.

Season the curry with salt and pepper to taste, and garnish with fresh coriander before serving. This Spicy Mango Chicken Curry pairs perfectly with steamed rice or naan bread.
