Ingredients:

  • 1 medium butternut squash (about 800g), peeled and diced
  • 2 apples, cored and sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh thyme leaves
  • 1/2 teaspoon of ground nutmeg
  • 1 cup of vegetable broth
  • 1/2 cup of bread crumbs
  • 2 tablespoons of butter
  • Salt and pepper to taste

Start by preheating your oven to 375°F (190°C). Peel and dice the butternut squash and slice the apples. Pour in the vegetable broth, season with salt and pepper, and let it simmer for about 10 minutes.

Transfer the mixture to a baking dish and sprinkle the bread crumbs on top. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown and crispy.
