Ingredients:

  • 2 small acorn squashes (about 600g each)
  • 1 cup canned pumpkin puree (240g)
  • 1 large apple, diced (about 200g)
  • 1/2 cup dried cranberries (60g)
  • 1/4 cup chopped pecans (30g)
  • 2 tablespoons maple syrup (30ml)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C). Cut the acorn squashes in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet and bake for 30-40 minutes, or until they are fork-tender.

While the squashes are baking, prepare the filling. In a bowl, mix together the pumpkin puree, diced apple, dried cranberries, chopped pecans, maple syrup, cinnamon, nutmeg, salt, and pepper.

Once the squashes are cooked, remove them from the oven and carefully flip them over. Fill each squash half with the pumpkin and apple mixture, packing it down gently. Return the filled squashes to the oven and bake for an additional 15-20 minutes, or until the filling is heated through.
