This savory cheesecake with a herb crust is a delightful twist on a classic dessert, combining rich, creamy cheese with a flavorful and aromatic crust. Let’s dive into how to make this delicious creation!

Ingredients:

  • 250g cream cheese
  • 100g goat cheese
  • 3 eggs
  • 10g fresh thyme
  • 10g fresh rosemary
  • 50g butter
  • 100g plain flour
  • 1 tsp salt

To start, preheat your oven to 180°C (350°F). In a mixing bowl, combine the cream cheese, goat cheese, and eggs. Mix until smooth and creamy. Strip the thyme and rosemary leaves from their stems and finely chop them before adding to the cheese mixture. Stir well to incorporate the herbs throughout.

Next, melt the butter in a saucepan over low heat. Once melted, add the flour and salt, stirring constantly until a smooth dough forms. Press the dough into the bottom of a greased springform pan, creating an even crust.

Pour the cheese and herb mixture on top of the crust, spreading it out evenly. Bake in the preheated oven for 45-50 minutes, or until the cheesecake is set and lightly golden on top.

Once baked, remove the cheesecake from the oven and let it cool slightly before releasing it from the springform pan. Serve warm or at room temperature, garnished with additional fresh herbs if desired.
