Unique Dessert Creation: Matcha Mochi Cake

Today, I’m excited to share a delightful dessert creation that combines the earthy flavors of matcha with the chewy texture of mochi. This unique Matcha Mochi Cake is perfect for a cozy afternoon tea or a light ending to a meal. Let’s dive into this intriguing recipe!

Ingredients:

  • glutinous rice flour (200g)
  • matcha powder (15g)
  • sugar (150g)
  • vanilla extract (5ml)
  • coconut milk (200ml)
  • eggs (2)

Kitchen Tools:

  • mixing bowl
  • whisk
  • microwave-safe bowl
  • oven
  • 8×8 baking pan

To start, preheat your oven to 350°F (180°C) and grease the 8×8 baking pan. In a mixing bowl, combine glutinous rice flour, matcha powder, and sugar. In a separate bowl, whisk together eggs, coconut milk, and vanilla extract. Slowly add the wet ingredients to the dry ingredients, stirring until well combined.

Pour the mixture into the greased baking pan and bake for 25-30 minutes, or until the top is set and slightly golden. While the cake is baking, prepare a simple syrup by heating equal parts sugar and water in a saucepan until the sugar dissolves.

Once the cake is done, remove it from the oven and let it cool slightly. Using a toothpick, poke several holes into the cake and drizzle the warm simple syrup over the top. This will add moisture and sweetness to the cake.

Allow the Matcha Mochi Cake to cool completely before cutting into squares and serving. Each bite offers a harmonious blend of matcha flavor with a chewy, mochi-like texture that is simply irresistible.

One unique tip for this recipe is to sprinkle toasted sesame seeds on top of the cake before serving. The nuttiness of the seeds adds a lovely depth of flavor and a bit of crunch to each bite.

I hope you enjoy making and savoring this Matcha Mochi Cake as much as I do. Feel free to get creative with additional toppings like whipped cream or fresh fruit. Happy baking!
