  • 1/4 tsp salt
  • 4 ripe peaches, sliced
  • 1 tbsp dried culinary lavender
  • 2 tbsp honey
  • 1 egg, beaten

To make this galette, start by preheating your oven to 375°F (190°C). In a large mixing bowl, combine the flour, sugar, and salt. Add the cold diced butter and use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs. Gradually add cold water, a few tablespoons at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

While the dough chills, prepare the peaches by slicing them and removing the pits. In a small bowl, mix the sliced peaches with the dried lavender and honey until well combined.

Once baked, let the galette cool slightly before serving. This dessert is best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream.
