I love experimenting with different ingredients to create delicious vegetarian meals, and this recipe for Spicy Chickpea Stuffed Bell Peppers is a recent favorite of mine. The combination of spices, chickpeas, and colorful bell peppers is sure to impress your taste buds!

Ingredients:

  • 4 large bell peppers
  • 400g cooked chickpeas
  • 200g diced tomatoes
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder

  • 2 tbsp olive oil

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a skillet over medium heat, heat the olive oil. Add the chopped onion and garlic, cooking until softened. Then, add the cooked chickpeas, diced tomatoes, ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir well to combine and let simmer for 5-7 minutes.

Spoon the chickpea mixture into each bell pepper, filling them to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the bell peppers are tender.

Once cooked, remove the foil and bake for an additional 5-10 minutes to allow the tops to brown slightly. Serve the spicy chickpea stuffed bell peppers hot, garnished with fresh herbs or a dollop of yogurt if desired.
