Ingredients:

  • 4 chicken breasts (600g)
  • 6 fresh figs (200g)
  • 200g button mushrooms
  • 150g goat cheese
  • 30ml balsamic vinegar
  • 15ml honey
  • Fresh rosemary
  • Olive oil
  • Salt and pepper

To start, preheat your oven to 180°C. Slice the figs and mushrooms into small pieces and sauté them in a skillet with olive oil until they are soft and golden. Add the balsamic vinegar, honey, salt, and pepper to the skillet, and let the mixture simmer for a few minutes.

While the fig and mushroom mixture is cooking, butterfly the chicken breasts and season them with salt, pepper, and fresh rosemary. Once the figs and mushrooms are ready, stuff each chicken breast with a generous amount of the mixture and crumble goat cheese on top.

Place the stuffed chicken breasts in a baking dish and drizzle with a bit more olive oil. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
