Hey there, foodies! I’m excited to share with you today one of my all-time favorite recipes that I recently stumbled upon during a trip to Southeast Asia. This Exotic Mango Curry is a delightful blend of sweet and savory flavors that will transport you to a tropical paradise with every bite.

For this dish, you’ll need some unique ingredients that might surprise you. Gather up 2 ripe mangoes (about 400g), 1 can of coconut milk (400ml), 1 red bell pepper (100g), 1 yellow onion (150g), 2 cloves of garlic, 1 tablespoon of curry powder, 1 tablespoon of soy sauce, a handful of fresh cilantro, and 200g of diced tofu for a vegan option or 300g of cooked shrimp for a seafood twist.

Start by peeling and dicing the mangoes into chunks, finely chopping the onion and bell pepper, mincing the garlic, and chopping the cilantro. In a large skillet over medium heat, sauté the onion and garlic until fragrant. Add the curry powder and stir for a minute before adding the coconut milk, soy sauce, bell pepper, and mango chunks.

Let the mixture simmer for about 15 minutes until the mango is soft and the sauce has thickened slightly. Add in the cooked shrimp or tofu and cook for another 5 minutes until everything is heated through. Season with salt and pepper to taste.
