Today, I’m excited to share a unique and indulgent dessert recipe that combines the delicate floral notes of lavender with the sweetness of honey. This Lavender Honey Cheesecake is perfect for special occasions or when you want to treat yourself to something luxurious.

For this recipe, you will need the following ingredients:

  • 450g cream cheese
  • 200g sugar
  • 3 eggs
  • 1 tsp lavender extract
  • 150g honey
  • 200g digestive biscuits
  • 100g butter

Be sure to have the following kitchen tools ready:

  • mixing bowl
  • electric mixer
  • springform pan
  • food processor
  • saucepan

To start, preheat your oven to 160°C. Crush the digestive biscuits in a food processor until they resemble fine crumbs. Melt the butter in a saucepan and then mix it with the biscuit crumbs. Press this mixture into the bottom of a lined springform pan to form the cheesecake base.

In a mixing bowl, combine the cream cheese and sugar, then beat until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the lavender extract and honey until fully incorporated. Pour this mixture over the biscuit base in the pan.

Bake the cheesecake in the preheated oven for about an hour, or until the center is set. Once done, allow it to cool completely before refrigerating for at least 4 hours or overnight.

When ready to serve, carefully remove the cheesecake from the pan and slice into portions. The total weight of the cooked dish is approximately 1200g, with around 10 servings. Each serving weighs about 120g, with an estimated calorie count of 350 per serving.

One unique tip for this Lavender Honey Cheesecake is to sprinkle edible dried lavender buds on top before serving, adding an extra touch of floral aroma and visual appeal.
