To start, gather the following ingredients:

  • 2 medium sweet potatoes (about 500g)
  • 200g all-purpose flour
  • 1 egg
  • 50g miso paste
  • 30ml sesame oil
  • 50g pine nuts
  • 1 cup fresh basil leaves
  • 2 cloves of garlic
  • 50ml olive oil
  • Salt and pepper to taste

You’ll also need the following kitchen tools:

  • baking sheet
  • potato masher
  • large pot
  • food processor

Start by preheating your oven to 200°C. Prick the sweet potatoes with a fork and place them on a baking sheet. Roast them for about 45 minutes or until they are soft. Remove them from the oven and let them cool slightly before peeling off the skins.

Mash the sweet potatoes using a potato masher until smooth. Add the flour and egg, and knead the mixture until it forms a smooth dough. Roll the dough into long ropes and cut them into bite-sized pieces to form the gnocchi.

In a large pot of salted boiling water, cook the gnocchi in small batches until they float to the surface. Remove them with a slotted spoon and set them aside.

To make the miso pesto, combine the miso paste, sesame oil, pine nuts, basil, garlic, and olive oil in a food processor. Blend until smooth, adding more olive oil if needed to reach your desired consistency. Season with salt and pepper to taste.

Toss the cooked gnocchi with the miso pesto until they are well coated. Serve hot, garnished with additional pine nuts and fresh basil leaves.

This dish serves 4 people, with each serving weighing approximately 300g. One serving is estimated to have around 400 calories.
