I’m excited to share one of my favorite gourmet dishes with you today — Pesto Shrimp Risotto. This creamy and flavorful risotto is the perfect combination of rich pesto and tender shrimp, creating a comforting and indulgent meal that is sure to impress.

Ingredients

  • Arborio rice (300g)
  • Shrimp, peeled and deveined (250g)
  • Homemade or store-bought pesto (150g)
  • Chicken broth (1 liter)
  • Dry white wine (100ml)
  • Grated Parmesan cheese (100g)
  • Finely chopped onion (1 medium)
  • Minced garlic (3 cloves)
  • Butter (50g)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

Preparation

Start by heating the chicken broth in a saucepan and keeping it warm over low heat. In a large skillet, melt the butter with olive oil over medium heat. Add the chopped onion and cook until translucent. Stir in the minced garlic and Arborio rice, cooking for another 2-3 minutes until the rice is slightly toasted.

Pour in the white wine and cook until it is absorbed. Begin adding the warm chicken broth one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, about 18-20 minutes.

Stir in the pesto, grated Parmesan cheese, and season with salt and pepper. In a separate skillet, sauté the shrimp for 2-3 minutes until pink and cooked through. Serve the shrimp over the creamy risotto and garnish with extra Parmesan cheese and fresh basil leaves.

The total weight of the cooked Pesto Shrimp Risotto is approximately 1200g. This recipe serves 4 people, with each serving weighing around 300g. Each serving is approximately 450 calories.

Clever Tip
