Mango and Avocado Rice Paper Rolls

Ingredients:

  • rice paper sheets (6 sheets)
  • mango (1, thinly sliced)
  • avocado (1, thinly sliced)
  • carrot (1, julienned)
  • cucumber (1, julienned)
  • mint leaves
  • cooked quinoa (1 cup)
  • lime (1, juiced)
  • soy sauce (2 tbsp)

Kitchen Tools:

  • cutting board
  • knife
  • bowl
  • saucepan

To start, prepare all your ingredients by slicing the mango, avocado, carrot, and cucumber into thin strips. Cook the quinoa according to package instructions and set aside to cool. In a small bowl, mix together the lime juice and soy sauce to create a tangy dipping sauce.

Fill a saucepan with warm water and place a rice paper sheet in the water for about 15-20 seconds until it softens. Remove the sheet and place it on a clean, flat surface. Layer on a few strips of mango, avocado, carrot, cucumber, mint leaves, and a spoonful of quinoa on one side of the paper.

Gently fold the sides of the rice paper over the filling and roll it up tightly, similar to a burrito. Continue this process with the remaining ingredients until all the rice paper sheets are used up.

Once all the rolls are assembled, slice them in half on a diagonal for a beautiful presentation. Serve the mango and avocado rice paper rolls with the zesty lime dipping sauce on the side for an extra burst of flavor.
