  • 6 dried figs
  • 50g pistachios
  • 2 sprigs of fresh rosemary
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

To start, preheat your oven to 375°F (190°C). Using a sharp knife, carefully butterfly each chicken breast, making sure not to cut all the way through. Place the butterflied chicken breasts between two sheets of plastic wrap and gently pound them with a meat mallet to even them out.

In a small bowl, mix together chopped dried figs, crushed pistachios, chopped rosemary leaves, honey, balsamic vinegar, and a drizzle of olive oil. Season with salt and pepper. Spoon this mixture onto one half of each chicken breast, then fold the other half over the stuffing.

Heat some olive oil in a frying pan over medium-high heat. Sear the stuffed chicken breasts on each side until golden brown, about 2-3 minutes per side. Transfer the chicken to an oven-safe dish and finish cooking in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
