Today’s Recipe: Pistachio and Fig Stuffed Chicken Breast

Welcome to my kitchen, where today I’m excited to share a unique and flavorful recipe for Pistachio and Fig Stuffed Chicken Breast. This dish combines the earthy sweetness of dried figs with the crunch of pistachios, all stuffed inside tender, juicy chicken breast. It’s a perfect dish for a cozy fall evening or a special occasion.

Ingredients:

  • 2 chicken breasts (approx. 400g)
  • 6 dried figs
  • 50g pistachios
  • 2 sprigs of fresh rosemary
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • meat mallet
  • frying pan
  • oven-safe dish

To start, preheat your oven to 375°F (190°C). Using a sharp knife, carefully butterfly each chicken breast, making sure not to cut all the way through. Place the butterflied chicken breasts between two sheets of plastic wrap and gently pound them with a meat mallet to even them out.

In a small bowl, mix together chopped dried figs, crushed pistachios, chopped rosemary leaves, honey, balsamic vinegar, and a drizzle of olive oil. Season with salt and pepper. Spoon this mixture onto one half of each chicken breast, then fold the other half over the stuffing.

Heat some olive oil in a frying pan over medium-high heat. Sear the stuffed chicken breasts on each side until golden brown, about 2-3 minutes per side. Transfer the chicken to an oven-safe dish and finish cooking in the preheated oven for 20-25 minutes, or until the chicken is cooked through.

Once the chicken is cooked, remove it from the oven and let it rest for a few minutes before slicing. Serve the Pistachio and Fig Stuffed Chicken Breast with a side of roasted vegetables or a fresh salad for a complete meal.

This dish weighs approximately 800g total, with 2 servings. Each serving is around 400g, with an estimated calorie count of 400 calories per serving.

**Pro Tip:** For an extra burst of flavor, try adding a sprinkle of crumbled feta cheese over the stuffed chicken breasts before serving. The creamy and tangy cheese pairs perfectly with the sweet and nutty filling.

I hope you enjoy making this Pistachio and Fig Stuffed Chicken Breast as much as I do. Get creative with your own favorite fillings and make this recipe your own! Happy cooking!
