The combination of sweet mango, spicy curry, and hearty pasta creates a truly delightful experience for your taste buds.

Ingredients:

  • penne pasta (250g)
  • ripe mango, diced (1 large)
  • red bell pepper, diced (1)
  • green onion, thinly sliced (3 stalks)
  • cilantro, chopped (1/4 cup)
  • coconut milk (1/2 cup)
  • curry powder (1 tbsp)
  • lime juice (2 tbsp)
  • salt (to taste)

  • cutting board

Start by cooking the penne pasta according to the package instructions in a large pot of salted water. Once cooked, drain the pasta using a strainer and rinse it under cold water to stop the cooking process.

In a mixing bowl, combine the cooked pasta, diced mango, red bell pepper, green onion, and chopped cilantro. In a separate bowl, whisk together the coconut milk, curry powder, lime juice, and salt to make the dressing.

Pour the creamy curry dressing over the pasta and toss everything together until well coated. Adjust the seasoning with more salt or lime juice if needed.

Serve the Mango Curry Pasta Salad chilled or at room temperature, allowing the flavors to meld together. This dish is perfect for a light lunch or as a side dish for grilled chicken or fish.
