Delicious Fusion: Thai-Inspired Green Curry Risotto Recipe

Thai-Inspired Green Curry Risotto

As the weather starts to cool down and the leaves change colors, I find myself craving warm and comforting dishes that still pack a punch of flavor. Today, I’m excited to share with you my unique twist on a classic Italian risotto by infusing it with Thai-inspired green curry flavors. This dish is a fusion of two culinary traditions that may seem unconventional but trust me, the combination is absolutely delightful.

To make this Thai-inspired green curry risotto, you will need the following ingredients:

  • 200g Arborio rice
  • 400ml coconut milk
  • 2 tbsp green curry paste
  • 1 liter vegetable broth
  • 1 red bell pepper, diced
  • 100g snow peas, trimmed
  • 1 lime, zest and juice
  • Handful of fresh basil leaves, torn
  • Salt and pepper to taste

Before you begin, make sure you have the following kitchen tools on hand:

  • saucepan
  • wooden spoon
  • grater
  • large skillet

Start by heating the vegetable broth in a saucepan until it reaches a simmer. In a large skillet, heat the green curry paste over medium heat for a minute until fragrant. Add the Arborio rice to the skillet and toast for a couple of minutes, stirring to coat the grains with the curry paste.

Begin adding the hot vegetable broth to the skillet, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy but still has a slight bite to it, about 18-20 minutes.

Once the rice is cooked to your liking, stir in the coconut milk, diced bell pepper, and snow peas. Cook for another 5 minutes until the vegetables are tender but still vibrant in color. Season with salt, pepper, lime zest, and lime juice.

To finish, stir in the torn basil leaves and give the risotto a final taste test for seasoning. Serve the Thai-inspired green curry risotto hot, garnished with extra basil leaves and a wedge of lime on the side.

This dish weighs approximately 1200g in total and serves 4. Each serving weighs around 300g and contains an estimated 450 calories.

One unique tip for this recipe is to add a splash of fish sauce for an extra umami kick that complements the creamy coconut and spicy curry flavors perfectly. Don’t be afraid to experiment and make this dish your own!
