That’s why I’m excited to share my recipe for a Green Goddess Quinoa Salad today. This vibrant dish is not only healthy and delicious but also incredibly simple to prepare.

Ingredients:

  • quinoa (200g)
  • avocado (1, diced)
  • cucumber (1, diced)
  • edamame (100g, shelled)
  • kale (100g, shredded)
  • green onions (2, chopped)
  • fresh mint (1/4 cup, chopped)
  • fresh parsley (1/4 cup, chopped)
  • pepitas (1/4 cup)
  • lemon (1, juiced)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • medium saucepan
  • fine mesh strainer
  • cutting board
  • sharp knife
  • mixing bowl
  • whisk

To start, rinse the quinoa thoroughly in a fine mesh strainer under cold water. In a medium saucepan, bring 1 1/2 cups of water to a boil, then add the quinoa. Cover, reduce heat to low, and let simmer for about 15 minutes until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.

In a large mixing bowl, combine the cooked quinoa, diced avocado, cucumber, shelled edamame, shredded kale, chopped green onions, fresh mint, and parsley. Toss everything together gently.

In a small bowl, whisk together the fresh lemon juice, olive oil, salt, and pepper. Pour this dressing over the quinoa salad and toss to combine. Sprinkle the pepitas on top for an added crunch.

This Green Goddess Quinoa Salad weighs approximately 1000g once assembled. It serves 4 people, with each serving weighing around 250g. Each serving is around 350 calories.
