Savory Mushroom and Pear Risotto: A Cozy Autumn Delight

The Perfect Autumn Comfort Dish

As the leaves start to change colors and the air gets a bit crisper, I find myself craving warm, comforting dishes that remind me of cozy nights by the fireplace. Today, I want to share with you a unique recipe that combines the earthy flavors of mushrooms with the sweetness of pears for a truly sensational dish that is perfect for fall.

To start, you’ll need the following ingredients:

  • Fresh shiitake mushrooms
  • Ripe pears
  • Arborio rice
  • Vegetable broth
  • White wine
  • Shallot
  • Garlic
  • Parmesan cheese
  • Butter
  • Salt and pepper

Make sure you have the following kitchen tools ready:

  • Chef’s knife
  • Cutting board
  • Large skillet
  • Wooden spoon

Start by sautéing the finely chopped shallot and minced garlic in a large skillet with some butter until fragrant. Add in the Arborio rice and toast it for a couple of minutes until it turns translucent. Deglaze the pan with white wine and allow it to cook off before adding in a ladle of vegetable broth. Stir continuously until the broth is absorbed before adding more.

While the risotto is cooking, slice the shiitake mushrooms and pears into thin slices. In a separate skillet, sauté the mushrooms in some butter until they are golden brown and caramelized. Add in the pears and cook until they are slightly softened.

Once the risotto is creamy and cooked to al dente, stir in the sautéed mushrooms and pears. Grate in some Parmesan cheese and season with salt and pepper to taste. Serve the dish hot, garnished with some extra Parmesan cheese and a sprinkle of fresh herbs for added freshness.
