Place the lobster tails on the grill pan, shell side down, and cook for about 4-5 minutes on each side until they are beautifully charred and cooked through.

While the lobster is grilling, prepare the other components of the dish. Peel and dice the dragon fruit into small cubes. Crush the black garlic cloves into a smooth paste. Toast the hazelnuts in a dry pan until fragrant, then roughly chop them.
