Unique Seasonal Fusion Recipe: Autumn Harvest Risotto

Today, I’m excited to share a delicious and comforting dish perfect for the autumn season – Autumn Harvest Risotto. This recipe combines the warmth of a classic risotto with the flavors of fall, creating a unique and satisfying meal that will surely become a favorite in your home.

Ingredients:

  • Arborio rice (300g)
  • Butternut squash, diced (300g)
  • Brussels sprouts, halved (200g)
  • Apple, diced (1)
  • Shallot, minced (1)
  • Garlic, minced (2 cloves)
  • Fresh thyme leaves (1 tbsp)
  • Vegetable broth (1 L)
  • White wine (1/2 cup)
  • Grated Parmesan cheese (1/2 cup)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

  • Large saucepan
  • Wooden spoon
  • Chef’s knife
  • Cutting board
  • Grater
  • Measuring cups

To start, heat the olive oil in a large saucepan over medium heat. Add the minced shallot and garlic, cooking until fragrant. Next, add the Arborio rice to the pan, stirring to coat the grains in the oil mixture.

Pour in the white wine and stir until it has been absorbed by the rice. Begin adding the vegetable broth, one ladleful at a time, stirring constantly. Continue this process until the rice is creamy and cooked through, but still slightly al dente.

In a separate pan, heat the butter over medium heat. Add the diced butternut squash, Brussels sprouts, apple, and thyme. Cook until the vegetables are tender and caramelized.

Once the risotto is cooked to your liking, stir in the grated Parmesan cheese and the caramelized vegetables. Season with salt and pepper to taste. Serve hot, garnished with additional thyme leaves and Parmesan cheese if desired.

This Autumn Harvest Risotto is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
