As the weather starts to cool down and the leaves begin to change colors, I find myself craving warm, comforting desserts that remind me of cozy nights spent with loved ones. Today, I’m excited to share a unique twist on a classic Middle Eastern dessert – Rosewater Pistachio Baklava. This dessert is the perfect combination of flaky phyllo pastry, sweet honey, floral rosewater, and crunchy pistachios.

To make this delicious dessert, you will need the following ingredients:

  • phyllo dough (300g)
  • unsalted butter (200g)
  • pistachios, chopped (150g)
  • sugar (100g)
  • ground cinnamon (1 tsp)
  • rosewater (2 tbsp)
  • honey (200g)

For this recipe, you will need the following kitchen tools:

  • baking dish
  • pastry brush
  • sharp knife
  • saucepan

To start, preheat your oven to 350°F (180°C). Melt the butter in a saucepan over low heat. Place one sheet of phyllo dough in the bottom of a greased baking dish and brush with melted butter. Repeat this process, layering the phyllo sheets and butter, until you have used half of the dough.

In a bowl, mix the chopped pistachios, sugar, cinnamon, and rosewater. Spread this mixture evenly over the phyllo layers in the baking dish. Continue layering the remaining phyllo sheets on top, brushing each with butter as before.

Using a sharp knife, carefully cut the baklava into diamond or square shapes before placing it in the oven. Bake for 40-45 minutes, or until the baklava is golden brown and crisp.

While the baklava is baking, heat the honey in a saucepan over low heat until it becomes thin and runny. Once the baklava is done, remove it from the oven and immediately pour the warm honey over the top, allowing it to seep into all the layers.

Let the baklava cool completely before serving to allow the flavors to meld together. This dessert is best enjoyed with a cup of hot tea or coffee, perfect for a chilly autumn evening.
