  • 1 small butternut squash, peeled, seeded, and cubed (about 600g)
  • 2 apples, peeled, cored, and chopped (about 300g)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • Salt and pepper, to taste

  • baking dish
  • large pot
  • immersion blender

Start by spreading the cubed butternut squash, chopped apples, onion, and garlic on a baking sheet. Drizzle with olive oil and sprinkle with cinnamon, nutmeg, salt, and pepper. Roast in the preheated oven for about 30-40 minutes, or until the vegetables are tender and slightly caramelized.

In a large pot, heat the vegetable broth over medium heat. Add the roasted vegetables to the pot and simmer for another 10 minutes to allow the flavors to meld together. Using an immersion blender, puree the soup until smooth and creamy.
