Exotic Pumpkin Curry Recipe with a Twist

Today, I’m excited to share with you a unique recipe that combines the flavors of autumn with a touch of exotic spice. This dish is perfect for a special dinner with loved ones or as a way to treat yourself to something a little different.

The Recipe

For this dish, you will need the following ingredients:

  • pumpkin puree (400g)
  • coconut milk (200ml)
  • curry powder (10g)
  • lemongrass (2 stalks)
  • chicken breast (300g)
  • rice noodles (150g)
  • bell pepper (1)
  • lime (1)

Before you begin, make sure you have the following kitchen tools on hand:

  • saucepan
  • chef’s knife
  • cutting board
  • grater
  • wooden spoon

To start, heat the saucepan over medium heat and add the pumpkin puree, coconut milk, and curry powder. Stir well to combine and let simmer for 10 minutes. Meanwhile, prepare the lemongrass by thinly slicing it and adding it to the saucepan.

While the sauce is simmering, thinly slice the chicken breast and bell pepper. Add them to the saucepan and cook for an additional 10 minutes, or until the chicken is cooked through. In the meantime, cook the rice noodles according to the package instructions.

Once everything is cooked, divide the noodles into bowls and ladle the pumpkin curry mixture over the top. Garnish with fresh lime juice and enjoy!
