Exploring New Flavors: Sweet Potato Coconut Curry

Today, I’m excited to share a recipe that combines two of my favorite ingredients: sweet potatoes and coconut milk. This dish is perfect for a cozy night in or a dinner party with friends. The warm and comforting flavors are sure to impress even the pickiest eaters!

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 large onion, chopped
  • 1 red bell pepper, sliced
  • 1 can (400ml) coconut milk
  • 2 tbsp red curry paste
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups spinach
  • 1 cup vegetable broth
  • 1 lime, juiced
  • Salt and pepper to taste

Kitchen Tools:

  • can opener

To start, heat some oil in a large pot over medium heat. Add the chopped onion and sliced bell pepper, cooking until softened. Stir in the red curry paste and cook for another minute until fragrant.

Next, add the diced sweet potatoes, drained chickpeas, and coconut milk to the pot. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 15-20 minutes, or until the sweet potatoes are tender.

Once the sweet potatoes are cooked through, stir in the spinach and lime juice. Season the curry with salt and pepper to taste. Let the curry simmer for a few more minutes to allow the flavors to meld together.

Serve the sweet potato coconut curry warm over steamed rice or with a side of naan bread. The creamy coconut milk pairs perfectly with the sweetness of the potatoes and the bold flavors of the curry paste.
