Ingredients:

  • rice noodles (200g)
  • red bell pepper (1, sliced)
  • green onions (3, sliced)
  • garlic cloves (2, minced)
  • fresh ginger (1 tbsp, grated)
  • soy sauce (3 tbsp)
  • sesame oil (2 tbsp)
  • creamy peanut butter (3 tbsp)
  • Szechuan peppercorns (1 tsp, crushed)
  • chili garlic sauce (2 tbsp)
  • vegetable broth (1 cup)

  • whisk
  • wooden spoon

To start, bring a large pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside. In a skillet, heat sesame oil over medium heat and add minced garlic, grated ginger, and sliced red bell pepper. Cook until the peppers are slightly softened.
