Ingredients:

  • butternut squash (2 small)
  • quinoa (200g)
  • dried cranberries (50g)
  • pecans (50g)
  • maple syrup (30ml)
  • cinnamon (1 tsp)
  • salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until the flesh is tender.

While the squash is roasting, cook the quinoa according to package instructions in a saucepan. Once the quinoa is cooked, fluff it with a fork and transfer it to a mixing bowl. Add in the dried cranberries, chopped pecans, maple syrup, cinnamon, salt, and pepper. Mix everything together until well combined.

Once the squash is cooked, remove it from the oven and carefully flip the halves over. Fill each squash half with the quinoa mixture, pressing it down gently to pack it in. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the top is golden brown.

Serve the Autumn Harvest Stuffed Squash warm, garnished with a sprinkle of extra cinnamon and a drizzle of maple syrup if desired. This dish is perfect for a cozy dinner on a chilly autumn evening.
