  • dried cranberries (50g)
  • pecans (50g)
  • maple syrup (30ml)
  • cinnamon (1 tsp)
  • salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until the flesh is tender.

While the squash is roasting, cook the quinoa according to package instructions in a saucepan. Once the quinoa is cooked, fluff it with a fork and transfer it to a mixing bowl.
