Today’s Recipe: Autumn Harvest Stuffed Squash

As the weather starts to cool down and the leaves begin to change colors, I find myself craving warm, comforting dishes that celebrate the flavors of fall. Today, I’m excited to share my recipe for Autumn Harvest Stuffed Squash, a hearty and delicious meal that is perfect for this season.

Ingredients:

  • butternut squash (2 small)
  • quinoa (200g)
  • dried cranberries (50g)
  • pecans (50g)
  • maple syrup (30ml)
  • cinnamon (1 tsp)
  • salt and pepper to taste

Kitchen Tools:

  • knife
  • cutting board
  • baking sheet
  • saucepan
  • mixing bowl

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 30-40 minutes, or until the flesh is tender.

While the squash is roasting, cook the quinoa according to package instructions in a saucepan. Once the quinoa is cooked, fluff it with a fork and transfer it to a mixing bowl. Add in the dried cranberries, chopped pecans, maple syrup, cinnamon, salt, and pepper. Mix everything together until well combined.

Once the squash is cooked, remove it from the oven and carefully flip the halves over. Fill each squash half with the quinoa mixture, pressing it down gently to pack it in. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the top is golden brown.

Serve the Autumn Harvest Stuffed Squash warm, garnished with a sprinkle of extra cinnamon and a drizzle of maple syrup if desired. This dish is perfect for a cozy dinner on a chilly autumn evening.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs around 300g. The approximate calorie count per serving is 350 calories.

One clever tip for this dish is to add a dollop of Greek yogurt on top of the stuffed squash before serving. The creamy tanginess of the yogurt pairs perfectly with the sweet and nutty flavors of the dish, adding an extra layer of deliciousness.

I hope you give this Autumn Harvest Stuffed Squash recipe a try and enjoy the flavors of fall in every bite. Feel free to customize the filling with your favorite ingredients and make it your own. Happy cooking!
