For this recipe, you will need:
– 4 large bell peppers
– 250g ground turkey
– 1 can (400g) black beans, drained and rinsed
– 1 cup cooked quinoa
– 1/2 cup corn kernels
– 1/2 cup diced tomatoes
– 1/4 cup chopped cilantro
– 1 teaspoon cumin
– 1 teaspoon paprika
– Salt and pepper to taste
– Grated cheese for topping

Preparation:

Begin by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from inside. Place the bell peppers upright in a baking dish.

In a mixing bowl, combine the ground turkey, black beans, cooked quinoa, corn kernels, diced tomatoes, cilantro, cumin, paprika, salt, and pepper. Mix everything until well combined.

Stuff each bell pepper with the turkey and quinoa mixture, packing it in tightly. Top each pepper with a generous amount of grated cheese.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Once the stuffed bell peppers are cooked through and the cheese is golden brown, remove them from the oven and let them cool for a few minutes before serving.

This recipe yields 4 servings, with each stuffed bell pepper weighing approximately 300g. Each serving is around 350 calories.
