– 1 cup sticky rice (200g)
– 1 cup coconut milk (240ml)
– 1/2 cup water (120ml)
– 2 tbsp sugar (30g)
– 1/4 tsp salt

For the surprise:
– 2 ripe mangoes, peeled and diced
– 1/4 cup sweet corn kernels (40g)
– 1/4 cup roasted peanuts, crushed (30g)
– 2 tbsp honey (30ml)

Preparation:

Start by rinsing the sticky rice in a strainer under cold water until the water runs clear. In a saucepan, combine the coconut milk, water, sugar, and salt. Add the rinsed sticky rice and bring to a gentle simmer over low heat. Cook, stirring occasionally, for about 15-20 minutes until the rice is tender and has absorbed all the liquid.

While the rice is cooking, prepare the surprise filling. In a mixing bowl, combine the diced mangoes, sweet corn kernels, crushed peanuts, and honey. Mix well until everything is evenly coated.
