Today’s Unique Recipe: Roasted Strawberry and Balsamic Goat Cheese Crostini

Hello, foodies! Today, I am excited to share a deliciously unique recipe that combines the sweet juiciness of roasted strawberries with the tangy richness of balsamic goat cheese on crispy crostini. Ingredients:

  • 1 baguette (250g)
  • 200g strawberries
  • 100g balsamic goat cheese
  • 1 tbsp honey
  • Fresh basil leaves for garnish
  • 2 tbsp olive oil
  • Pinch of salt

To start, preheat your oven to 375°F (190°C). Slice the baguette into ½ inch thick slices and place them on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Toast in the oven for about 5-7 minutes until lightly golden and crisp.

While the crostini is toasting, prepare the roasted strawberries. Remove the stems from the strawberries and cut them in half. Place them in a mixing bowl and drizzle with honey. Toss to coat evenly. Spread the strawberries out on a baking sheet and roast in the oven for 15-20 minutes, until they are soft and slightly caramelized.

In a small saucepan, heat the balsamic goat cheese over low heat until it is soft and spreadable. Remove from the heat and set aside.

Once the crostini is toasted, spread a generous amount of the balsamic goat cheese on each slice. Top with a roasted strawberry half and garnish with fresh basil leaves.
