Today, I’m excited to share with you a unique twist on a classic dessert that combines the earthy sweetness of pumpkin with the richness of bread pudding. This recipe is perfect for a cozy night in or a festive fall gathering.

Ingredients:

  • 200g pumpkin puree
  • 300g stale bread, cubed
  • 100g dried cranberries
  • 50ml maple syrup
  • 250ml heavy cream
  • 100g brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • 1/2 tsp salt

To start, preheat your oven to 350°F (180°C). In a large mixing bowl, combine the pumpkin puree, heavy cream, brown sugar, cinnamon, nutmeg, eggs, vanilla extract, and salt. Whisk everything together until well combined. Add in the cubed stale bread and dried cranberries, making sure the bread is fully coated in the pumpkin mixture.

Pour the mixture into a greased baking dish and drizzle the maple syrup over the top. Bake in the preheated oven for 40-45 minutes, or until the pudding is set and the top is golden brown.

Once the pumpkin bread pudding is cooked through, remove it from the oven and let it cool slightly before serving. This dish is best enjoyed warm, allowing the flavors of the pumpkin and spices to really shine.

This pumpkin bread pudding weighs approximately 1000g, serves 8, with each serving weighing around 125g. An average serving of this dish contains approximately 300 calories.
