  • 300g firm tofu, cubed
  • 200g king oyster mushrooms, sliced
  • 150g shiitake mushrooms, sliced
  • 100g enoki mushrooms, separated
  • 50ml soy sauce
  • 30ml sesame oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 2 spring onions, chopped
  • 1 tbsp cornstarch
  • 100ml water

Kitchen Tools:

  • cutting board
  • spatula
  • measuring cup

To start, heat some sesame oil in a wok over medium-high heat. Add in the minced garlic, ginger, and red chili, and sauté until fragrant. Toss in the tofu cubes and cook until golden brown on all sides.

Next, add in all the sliced mushrooms and stir-fry for a few minutes until they begin to soften. In a small bowl, mix together soy sauce, water, and cornstarch to create a slurry. Pour this mixture into the wok and stir well to coat the tofu and mushrooms evenly.

Continue cooking until the sauce thickens slightly and coats the ingredients nicely. Adjust seasoning with more soy sauce if needed. Finally, sprinkle in the chopped spring onions for a fresh burst of flavor.

Once everything is cooked through and well combined, remove from heat and transfer to a serving dish.
