  • 1/2 tsp nutmeg

To start, preheat your oven to 400°F (200°C). Cut the acorn squashes in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast them in the oven for about 30 minutes, or until tender.

While the squashes are roasting, rinse the quinoa under cold water. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15 minutes, or until the quinoa is cooked and the broth is absorbed.

Return the stuffed squashes to the oven and bake for an additional 15 minutes, or until the tops are golden brown and the filling is heated through.
