  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 apples, diced
  • 2 stalks of celery, diced
  • 1 onion, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • baking sheet
  • medium saucepan
  • mixing bowl

To start, preheat your oven to 400°F (200°C). Cut the acorn squashes in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet and roast them in the oven for about 30 minutes, or until tender.

While the squashes are roasting, rinse the quinoa under cold water. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15 minutes, or until the quinoa is cooked and the broth is absorbed.

In a mixing bowl, combine the cooked quinoa, diced apples, celery, onion, dried cranberries, chopped pecans, cinnamon, nutmeg, salt, and pepper. Mix well to combine all the flavors.

Once the acorn squashes are tender, remove them from the oven and carefully flip them over. Fill each squash half with the quinoa stuffing mixture, packing it in tightly.

Return the stuffed squashes to the oven and bake for an additional 15 minutes, or until the tops are golden brown and the filling is heated through.

This harvest stuffed acorn squash dish weighs approximately 1200 grams in total. It serves 4 people, with each serving weighing around 300 grams. A serving of this dish is approximately 350 calories.
