Today’s Unique Dessert Creation: Pumpkin Spice Chocolate Chip Cookie Tiramisu

In the spirit of the fall season, I wanted to share a delicious and unique dessert recipe with you all today. This Pumpkin Spice Chocolate Chip Cookie Tiramisu is a fun twist on the classic Italian dessert, combining the warm flavors of pumpkin spice with the richness of chocolate chip cookies. It’s the perfect treat to indulge in on a cozy evening or to impress your friends and family at a fall gathering.

I started by baking a batch of pumpkin spice chocolate chip cookies. In a large mixing bowl, I combined 200g of all-purpose flour, 1 tsp of baking powder, 1/2 tsp of cinnamon, 1/4 tsp of nutmeg, 1/4 tsp of ginger, and a pinch of salt. In another bowl, I creamed together 150g of butter, 150g of brown sugar, and 100g of granulated sugar until light and fluffy. I added in 1 egg and 1 tsp of vanilla extract, then slowly incorporated the dry ingredients. Finally, I folded in 150g of chocolate chips. I scooped out tablespoons of dough onto a baking sheet and baked the cookies at 350°F for 10-12 minutes until golden brown.

Next, I prepared the tiramisu filling. In a bowl, I combined 250g of mascarpone cheese, 100g of powdered sugar, and 1 tsp of vanilla extract until smooth. In a separate bowl, I whipped 200ml of heavy cream until stiff peaks formed. I gently folded the whipped cream into the mascarpone mixture until well combined.

To assemble the dessert, I soaked the pumpkin spice chocolate chip cookies in a mixture of 100ml of brewed coffee and 50ml of rum. I arranged a layer of cookies in the bottom of a serving dish, then spread a layer of the mascarpone filling on top. I repeated this process, finishing with a layer of the filling on top. I dusted the tiramisu with cocoa powder and refrigerated it for at least 4 hours to set.

Ingredients:

  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • Pinch of salt
  • 150g butter
  • 150g brown sugar
  • 100g granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 150g chocolate chips
  • 250g mascarpone cheese
  • 100g powdered sugar
  • 200ml heavy cream
  • 100ml brewed coffee
  • 50ml rum
  • for dusting

Kitchen Tools:

  • Mixing bowl
  • Whisk
  • Baking sheet
  • Electric mixer
  • Serving dish

The total weight of the cooked Pumpkin Spice Chocolate Chip Cookie Tiramisu is approximately 1200g. This recipe makes 8 servings, with each serving weighing around 150g. An estimate of the calorie count per serving is 350 calories.

A unique tip for this dessert is to let the tiramisu sit in the refrigerator overnight before serving. This allows the flavors to meld together and the cookies to soften, creating a truly decadent and delicious dessert experience.

I hope you give this Pumpkin Spice Chocolate Chip Cookie Tiramisu a try and enjoy it as much as I do. Feel free to get creative with your own variations and make it your own! Happy baking!
