Today, I’m excited to share with you a dish that perfectly captures the vibrant flavors of summer in a warming, comforting bowl. This Spicy Mango Coconut Curry Rice Bowl is a unique blend of tropical sweetness from mangoes, creamy coconut milk, and a kick of spicy curry. It’s a perfect dish to enjoy on a cozy evening at home or to impress your friends at a dinner party.

Ingredients:

  • Basmati rice (200g)
  • Mango, diced (1 medium)
  • Coconut milk (400ml)
  • Curry powder (2 tbsp)
  • Chili flakes (1 tsp)
  • Turmeric (1 tsp)
  • Fresh ginger, minced (1 tbsp)
  • Garlic, minced (2 cloves)
  • Onion, diced (1 medium)
  • Red bell pepper, sliced (1)
  • Lime, juiced (1)
  • Fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • Saucepan
  • Chef’s knife
  • Cutting board
  • Wooden spoon
  • Measuring spoons

To start, rinse the basmati rice under cold water until the water runs clear. In a saucepan, bring 400ml of coconut milk and 200ml of water to a boil. Add the rinsed rice, cover, and simmer on low heat for about 15-20 minutes until the rice is cooked through.

In a separate saucepan, heat some oil over medium heat and sauté the diced onion, minced garlic, and ginger until they are fragrant. Add the sliced bell pepper and continue to cook until the vegetables are tender. Stir in the curry powder, turmeric, and chili flakes, allowing the spices to bloom.

Once the vegetables are cooked, add the diced mango to the saucepan along with the cooked basmati rice. Stir in the lime juice and mix everything together until well combined. Season with salt and pepper to taste.

Serve the Spicy Mango Coconut Curry Rice Bowl hot, garnished with fresh cilantro for a burst of freshness. The combination of sweet mango, creamy coconut milk, and spicy curry creates a flavor profile that will keep you coming back for more.
