Deliciously Unique Sweet Potato Protein Balls

Today, I’m excited to share a brand-new recipe for healthy sweet potato protein balls. With a perfect blend of sweetness and protein, these little bites are great for a midday snack or post-workout fuel. The unexpected combination of sweet potato and chickpeas creates a delightful texture and flavor that you’ll love.

Ingredients:

  • 200g cooked sweet potato
  • 100g canned chickpeas
  • 50g rolled oats
  • 30g almond butter
  • 15ml maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 15g chia seeds
  • 30g unsweetened shredded coconut

Kitchen Tools:

  • baking sheet
  • measuring spoons

Start by preheating your oven to 180°C. In a food processor, combine the cooked sweet potato, chickpeas, rolled oats, almond butter, maple syrup, cinnamon, and vanilla extract. Blend until smooth and well combined.

Transfer the mixture to a mixing bowl and stir in the chia seeds. Scoop out small portions of the mixture and roll them into balls. Roll each ball in the shredded coconut to coat.

Place the coated balls on a baking sheet and bake for 12-15 minutes, until lightly golden. Allow the balls to cool before serving.

These sweet potato protein balls weigh approximately 500g in total. This recipe makes about 12 balls, with each serving weighing around 42g. Each serving is estimated to contain around 120 calories.

One unusual tip to make these protein balls even more delicious is to sprinkle a little extra cinnamon on top before baking. This will add an extra layer of flavor that complements the sweetness of the sweet potato and maple syrup perfectly.
