Exploring a Seasonal Fusion Dish

Ingredients:

  • butternut squash (500g, peeled and diced)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • cinnamon (1 tsp)
  • ginger (1 tbsp, grated)
  • chickpeas (1 can, drained and rinsed)
  • spinach (200g)
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

To start, heat a large pot over medium heat and add a splash of oil. Toss in the diced butternut squash and sauté until it begins to soften, about 5 minutes. Stir in the curry powder, cinnamon, and grated ginger, allowing the spices to coat the squash and become fragrant.

Next, pour in the coconut milk and add the drained chickpeas. Bring the mixture to a gentle simmer and let it cook for another 10-15 minutes, or until the squash is tender and the flavors have melded together beautifully. Season with salt and pepper to taste.

Finally, stir in the fresh spinach and allow it to wilt into the dish. The vibrant green leaves will add a pop of color and a dose of healthy nutrients to this hearty and comforting meal. Once the spinach is wilted, give everything a final stir and remove the pot from the heat.

This seasonal fusion dish weighs approximately 1200g total and serves 4 people. Each serving clocks in at around 300 calories. One clever tip for this recipe is to sprinkle a handful of toasted coconut flakes on top before serving. It adds a delightful crunch and extra burst of coconut flavor that takes this dish to the next level.
