Introducing: Summer Stuffed Peppers

Hey there, foodies! Today, I’m excited to share with you my latest creation: Summer Stuffed Peppers. This dish is perfect for those warm days when you’re craving something fresh, flavorful, and colorful. I love how the vibrant peppers bring a pop of brightness to the table, making it a feast for both the eyes and the taste buds.

To start off, gather the following ingredients:

  • 2 red bell peppers
  • 1 cup of quinoa
  • 150g cherry tomatoes
  • 100g feta cheese
  • 2 tbsp olive oil
  • Handful of fresh basil leaves
  • 1 lemon, juiced
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • knife
  • cutting board
  • mixing bowl
  • baking dish

Start by preheating your oven to 375°F (190°C). While the oven is heating up, rinse the quinoa under cold water, then cook according to package instructions. Once cooked, fluff the quinoa with a fork and set it aside to cool.

Next, slice the tops off the red peppers and remove the seeds and membranes from inside. Place the peppers in a baking dish and set aside.

In a mixing bowl, combine the cooked quinoa, halved cherry tomatoes, crumbled feta cheese, olive oil, chopped basil leaves, lemon juice, salt, and pepper. Mix everything together until well combined.

Stuff each red pepper with the quinoa mixture, packing it in tightly. Place the stuffed peppers in the baking dish and drizzle a little extra olive oil on top.

Bake the stuffed peppers in the preheated oven for about 25-30 minutes, or until the peppers are tender and slightly charred on the edges.

Once cooked, remove the peppers from the oven and let them cool slightly before serving. Garnish with additional fresh basil leaves and a sprinkle of feta cheese.

This recipe makes 2 servings, with each serving weighing approximately 400g. One serving of these delicious Summer Stuffed Peppers is roughly around 350 calories.

A unique tip for this dish is to sprinkle a bit of lemon zest over the stuffed peppers before serving. The citrusy kick adds a refreshing twist to the flavors, making each bite even more delightful.

I hope you give these Summer Stuffed Peppers a try and enjoy them as much as I do. Feel free to get creative with the ingredients and make this recipe your own. Happy cooking!
