Mango-Coconut Curry Chicken

Today, I’m excited to share a recipe that combines the tropical flavors of mango and coconut with a hint of spice in a savory curry chicken dish. This exotic blend is perfect for a cozy dinner at home or for impressing dinner guests with something a little out of the ordinary.

Ingredients:

  • 500g chicken breast, diced
  • 1 ripe mango, peeled and diced
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 1-inch piece of ginger, grated
  • 1 red chili, finely chopped
  • Handful of fresh coriander, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Kitchen Tools:

Start by heating a pan over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the pan and set it aside.

In the same pan, add the chopped onion, minced garlic, grated ginger, and chopped chili. Sauté until the onions are translucent and the mixture is fragrant. Add the curry powder and stir well to coat the onions.

Next, pour in the coconut milk and bring the mixture to a simmer. Add the diced mango and cooked chicken back into the pan. Let everything simmer together for about 15-20 minutes, allowing the flavors to meld.

Just before serving, squeeze the lime juice over the dish and season with salt and pepper to taste. Garnish with fresh coriander for a pop of color and flavor.

Once everything is simmered to perfection, it’s time to serve up this delightful Mango-Coconut Curry Chicken dish. The total weight of the cooked dish is approximately 1250g, with enough for 4 servings. Each serving weighs around 312.5g, with an estimated calorie count of 350 per serving.

For a fun twist, try topping each serving with a sprinkle of toasted coconut flakes for added crunch and a touch of sweetness.
