Hello foodies! Today, I’m excited to share with you a refreshing and unique recipe for a Roasted Beet and Watermelon Salad. This dish is perfect for hot summer days when you’re craving a light and flavorful meal. The combination of earthy roasted beets and juicy watermelon will definitely surprise your taste buds!

Ingredients:

  • Beets (300g)
  • Watermelon (200g)
  • Feta cheese (100g)
  • Fresh mint leaves (15g)
  • Balsamic glaze (30g)
  • Olive oil (15g)
  • Salt (to taste)
  • Black pepper (to taste)

  • Baking sheet
  • Knife
  • Cutting board
  • Mixing bowl

To start, preheat your oven to 400°F (200°C). Peel and dice the beets into small cubes, then spread them out on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for about 25-30 minutes until tender.

While the beets are roasting, cube the watermelon and crumble the feta cheese into a mixing bowl. Chop the fresh mint leaves and add them to the bowl as well.

Once the beets are done roasting, let them cool slightly before adding them to the bowl with the watermelon, feta, and mint. Drizzle balsamic glaze over the salad and gently toss everything together to combine.

Serve the Roasted Beet and Watermelon Salad chilled, allowing the flavors to meld together. This dish is perfect for a light lunch or as a side dish for a summer BBQ.
