Today, I’m sharing a cozy fall recipe that’s perfect for those chilly evenings when you want something warm and comforting. This Curried Butternut Squash Soup is a delicious blend of sweet and savory flavors, with a hint of spice that will warm you up from the inside out.

Ingredients:

  • 1 medium butternut squash (peeled and diced)
  • 1 large onion (chopped)
  • 2 carrots (peeled and sliced)
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 2 tbsp curry powder
  • 1 tbsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 2 tbsp olive oil
  • salt and pepper to taste

Start by preheating your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 25-30 minutes, or until the squash is tender and caramelized.

In a large soup pot, heat the remaining olive oil over medium heat. Add the chopped onion and sliced carrot, and sauté until softened, about 5 minutes. Stir in the curry powder, cumin, and cayenne pepper, and cook for another minute until fragrant.

Add the roasted butternut squash to the pot, along with the coconut milk and vegetable broth. Bring the mixture to a simmer, then reduce heat and let it cook for about 20 minutes to allow the flavors to meld together.

Using an immersion blender, carefully blend the soup until smooth and creamy. Season with salt and pepper to taste, and adjust the seasoning as needed.
