Mango-Coconut Curry Chicken

Today, I’m excited to share a dish that perfectly captures the vibrant flavors of summer transitioning into fall: Mango-Coconut Curry Chicken. This unique fusion dish combines the sweet and tropical taste of mango with the creamy richness of coconut milk and the warm spices of curry. It’s a comforting and exotic meal that is sure to impress your taste buds!

Ingredients:

  • 2 chicken breasts (about 400g)
  • 1 ripe mango, diced
  • 1 can of coconut milk (400ml)
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1-inch piece of ginger, grated
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 1 red chili, sliced
  • Fresh coriander leaves, for garnish
  • Salt and pepper, to taste
  • 2 tbsp of cooking oil

Kitchen Tools:

  • knife
  • cutting board
  • skillet
  • wooden spoon
  • grater

To start, heat the oil in a skillet over medium heat. Add the chopped onion, garlic, ginger, and sliced chili. Sauté until the onions are translucent and fragrant. Next, add the curry powder and turmeric, stirring to toast the spices for about a minute.

Slice the chicken breasts into bite-sized pieces and add them to the skillet. Season with salt and pepper, and cook until the chicken is browned on all sides. Then, pour in the coconut milk and diced mango. Allow the mixture to simmer gently for about 15-20 minutes until the chicken is cooked through and the flavors have melded together.

Once the chicken is tender, taste the curry and adjust the seasoning as needed. Serve the Mango-Coconut Curry Chicken hot, garnished with fresh coriander leaves. This dish pairs perfectly with steamed rice or naan bread to soak up the delicious sauce.

One clever tip for this dish is to add a splash of lime juice right before serving to brighten up the flavors and add a touch of acidity to balance out the sweetness of the mango and coconut.

I hope you give this Mango-Coconut Curry Chicken recipe a try and enjoy the explosion of flavors in every bite. Feel free to customize it with your favorite veggies or protein to make it your own!
